Mini chicken patties MAKES ABOUT 60

INGREDIENTS 11/2 onions, chopped 2 green finger chillies, tops removed, seeds left in 1½ kg minced chicken 1½ tbsp garlic, crushed 1/2 tbsp ginger, finely chopped Fresh coriander, finely chopped 1 large tomato, finely chopped Sunflower oil, for frying Mini bread rolls, to serve (optional) Chutney, to serve (optional)

FOR THE SEASONING 2 tsp bicarbonate of soda 1 tbsp ground cumin 2 tsp ground coriander 2 tsp sweet paprika 21/2 tsp salt 1 tsp garam masala

■ In a blender, combine the onions and green chillies, blending until smooth.

■ Use a sieve to drain any excess moisture from the onion puree.

■ In a large bowl, mix the minced chicken, onion mixture, garlic, ginger and coriander. Add all the seasoning ingredients and mix well until combined. Gently fold in the chopped tomato.

■ Heat a frying pan with enough oil for shallow frying. Take a small portion of the mixture, flatten it, and fry to check the seasoning.

■ Keep a cup of water nearby to wet your hands as you work, which will help prevent sticking.
