Watering The Wine
Sommelier India
|September/October 2017
Stories of French producers watering the wine may not be a crime but a way of improving the ageing of wine.
Producers in the Bandol region of France (vinsdebandol.com) have been experimenting by submerging 120 bottles of red, white and rosé wine 40 metres under the Mediterranean sea and leaving them to age for a year in special boxes on the seabed with bottle corks sealed with wax to prevent them moving under water pressure.
