Spicy Guacamole

Ripe avocados are key to this creamy-chunky side; look for ones with very dark skin that gives when lightly pressed
2 ripe avocados, pitted, peeled, halved
1/4 cup chopped red onion
2 Tbs. chopped cilantro + additional leaves
1 jalapeño pepper, finely chopped (about 1 Tbs.)
1 Tbs. fresh lime juice
1 tsp. minced garlic
1/2 tsp. adobo all-purpose seasoning with pepper, such as Goya
2 cups tortilla chips
• Using spoon, scoop flesh from avocados into medium mixing bowl. Using back of spoon, tines of fork or potato masher, mash avocados until chunky-smooth.
• Stir in onion, chopped cilantro, jalapeño, lime juice, garlic and adobo seasoning until thoroughly combined. Cover with plastic wrap, pressing wrap directly onto surface of guacamole. Chill until ready to use (up to 4 hrs). Uncover; garnish with additional cilantro leaves and serve with chips on the side for dipping.
