Air Fryer Pepperoni Pizzas

Air Fryer Pepperoni Pizzas
ACTIVE 20 MIN. • TOTAL 45 MIN. SERVES 4
- 1 small red onion, thinly sliced into half-moons
- 2 Tbsp olive oil, plus more for brushing Kosher salt
- 4 oz sliced pepperoni
- pepperoncini, thinly sliced All-purpose flour, for dusting
- 1 lb refrigerated pizza dough, halved, at room temp
- 8 slices provolone cheese, divided Honey, for drizzling
- In small bowl, toss onion with 2 Tbsp oil and 1/4 tsp salt. Add pepperoni and pepperoncini and toss to combine.
- On lightly floured surface, shape each dough half to size of insert in bottom of air fryer basket.
- Remove air fryer insert and brush with oil. Place 1 dough piece on top and return insert to basket. Return basket to air fryer and heat air fryer to 400°F (dough will begin to cook as it heats). Once air fryer reaches 400°F, air-fry 3 min. Using tongs, flip and air-fry 2 min. more.
- Top pizza with 4 slices provolone and half of pepperoni mixture. Air-fry until crust is golden brown and crisp, 7 to 8 min. more.
- Transfer to cutting board and drizzle with honey. Repeat with remaining dough, cheese, and toppings.
Pesto Shrimp and Zucchini SkewersACTIVE 20 MIN. • TOTAL 20 MIN. SERVES 4
- 1 lb large peeled and deveined shrimp
- 1 medium zucchini, sliced into half-moons
- 1 Tbsp olive oil Kosher salt and pepper
- 1/3 cup pesto, divided
- Heat grill to medium-high.
- In large bowl, toss shrimp and zucchini with oil and 1/2 tsp each salt and pepper.
