COCONUT VANILLA SNOWFLAKE SANDWICHES

MAKES 20 PREP 40 MINS COOK 12 MINS

• 80g butter, softened

• ½ cup caster sugar

• 2 tsp vanilla extract

• 1 egg, lightly beaten

• 1 cup plain flour

• 1 cup self-raising flour

• ½ cup desiccated coconut

• 60g white chocolate melts, melted

• blue and green food colouring (see tip)

ICING

• 80g butter, softened

• 1 cup icing sugar

• 2 tbsp milk

• 1 tsp vanilla extract

1 Line two large oven trays with baking paper.

2 Beat butter, sugar and vanilla in the small bowl of an electric mixer until light and fluffy. Transfer to a large bowl and gradually beat in egg until well combined.

3 Beat in combined sifted flours and 2 tbsp water on low speed until combined.

Turn onto a lightly floured surface. Bring dough together and shape into a flat disk. Wrap in cling film and chill for 20 mins.

4 Roll out the dough between two sheets of baking paper to about 5mm thick. Using a lightly floured 5cm round cutter, cut rounds from the dough, re-rolling it as necessary. Place on prepared trays about 2cm apart.

5 Cook in a 160°C preheated oven for 10-12 mins or until lightly golden. Cool on trays.
