PORK & APPLE RISSOLES WITH ONION GRAVY

SERVES 4 PREP 20 MINS COOK 20 MINS

1 Granny Smith apple

500g pork mince

2 cloves garlic, crushed

½ cup panko breadcrumbs

2 tbsp chopped fresh parsley

¼ cup olive oil

1 large onion, sliced

1 tbsp flour

1½ cups chicken stock

mashed potato, steamed broccolini, to serve

1 Coarsely grate apple. Squeeze and reserve juice.

2 Place apple, pork, garlic, breadcrumbs and parsley in a large bowl. Season with salt and pepper. Mix well. Divide mixture into eight portions. Shape into rissoles.

3 Heat 2 tbsp of oil in a large non-stick frying pan over a medium heat. Add rissoles. Cook for 3-4 mins on each side, until cooked through. Transfer to a plate. Cover to keep warm.

4 Heat remaining oil in same pan over medium-high heat. Add onion. Cook, stirring occasionally, for 5 mins until soft. Add flour. Cook, stirring, for 1 min. Gradually stir in stock and reserved apple juice. Cook, stirring, for 2 mins, or until thickened. Return rissoles to pan. Cook for 1 min until hot. Season with pepper.

5 Serve rissoles with gravy, mashed potato and steamed broccolini.

CHILLI JAM CHICKEN & CASHEW STIR-FRY

• ¼ cup chilli jam

• 2 tbsp soy sauce, plus extra to serve

• 2 tbsp lime juice

• 2 tsp brown sugar

• 200g vermicelli rice noodles

• 500g chicken mince

• 1 small red onion, cut into thin wedges

• 1 red capsicum, cut into 3cm pieces
