EASTER EGG ROCKY ROAD

MAKES 15 PIECES PREP 20 MINS + 1 HOUR CHILLING COOK 5 MINS

• 150g butter, chopped

• ¼ cup firmly packed brown sugar

• 2 x 180g blocks milk or dark chocolate, chopped

• 1 tbsp vegetable oil

• ½ cup pistachios, toasted

• ⅓ cup mini marshmallows

• 150g shortbread fingers, roughly chopped

• 3 x 55g bars Turkish Delight, chopped

• 10 mini white chocolate Easter eggs

• ½ cup shredded coconut, toasted

1 Line a 20cm square pan with baking paper, extending paper 2cm from edges.

2 In a medium saucepan, melt butter and sugar together over low heat, stirring, until sugar dissolves. Add chocolate. Cook, stirring, 3 mins or until melted and smooth. Set aside, off the heat 5 mins to cool slightly. Stir in oil.
