Load up the freezer with these simple and delicious icy treats this festive season

ROCKY ROAD ICECREAM 'PUDDING'

SERVES 10 PREP 15 MINS + OVERNIGHT FREEZING COOK 5 MINS

1 Lightly grease 10-cup capacity freezerproof bowl with plastic wrap.

2 Scoop ice-cream into a separate bowl and fold in raspberries, peanuts, marshmallows and Oreos.

3 Pour rocky road mixture into lined bowl, smoothing it with a spoon or spatula. Cover with plastic wrap and freeze for 4-6 hours or overnight.

4 To serve, carefully remove moulded ice-cream from tin and remove plastic wrap. Place pudding on a serving plate and pour over melted white chocolate, allowing it to drizzle down the sides. Serve with biscuits and cherries.
