Cauliflower mac and cheese

Sneak some extra veggies into dinner with this healthier update on a family favourite.

YOU WILL NEED

  • ½ cauliflower, about 300g, roughly chopped

  • 200ml whole milk

  • 150g mix of mozzarella and Cheddar cheese, grated

  • 1tsp Dijon mustard

  • 200g dried macaroni

  • Green salad, to serve

HOW TO DO IT

1 Put the cauliflower, milk, 100ml water, and some salt and pepper in a large microwave-safe bowl, loosely cover and microwave on high (800W) for 10 mins, checking and stirring halfway through. Milk has a tendency to boil over, so make sure that the bowl is big enough and keep an eye on it.

2 Once the cauliflower is soft enough, blitz it with a stick blender until smooth. Add most of the cheese and the mustard, and mix so that the cheese melts.

3 Put the macaroni into another large microwave-safe bowl and cover with 800ml water. Microwave on high for 6 mins, stirring every 2 mins.

4 Drain the pasta and mix with the cauliflower sauce. Transfer to a shallow microwave-safe ceramic or glass dish. Scatter over the remaining cheese and microwave on high for 2 mins. Serve with a green salad.
