Low-cal DINNERS

Turkey 'tacos'

SERVES 2-3 PREP 10 MINS COOK 15 MINS

* 6 sprays of spray olive oil

* 1 onion, sliced

* 2 peppers, deseeded and thinly sliced

* 2tsp chipotle paste

* 1tsp smoked paprika

* 300g turkey thigh mince

* Small bunch coriander, a few leaves reserved, the rest roughly chopped

* 1 wholemeal tortilla wrap

* 4tbsp natural yogurt

* 1 Little Gem lettuce, broken into leaves

1 Put a nonstick frying pan on a medium heat; spray with the oil. Add the onion and peppers, then half of the chipotle paste and smoked paprika. Cook for 15 mins, stirring occasionally. Add 2tbsp water for the last 5 mins.

2 In a separate frying pan, fry the mince over a medium heat along with the remaining chipotle paste and paprika, breaking it up with a spoon as it cooks. Combine the peppers and turkey, and stir through most of the chopped coriander.

3 Heat the grill to high. Toast the tortilla under the grill for 2-3 mins on each side until crisp.

4 Mix the reserved chopped coriander and yogurt. Divide the yogurt mix between the lettuce cups, top with the turkey- vegetable mixture and coriander leaves, and crumble the toasted wrap on top.

Per serving: 253 cals, 7.3g fat, 2g sat fat, 23g carbs.

Spiced pork and veg tray bake

* 450g pork tenderloin

* 2tsp fennel seeds

* ½tsp chilli flakes

* 1 lemon, ½ zested, then cut into wedges

* 1 garlic clove, crushed

* 1tbsp runny honey

* 1 bulb fennel, each half cut into 8, fronds reserved

* 200g mixed tomatoes

* Spray oil

* 200g fine green beans, trimmed

* 250g pack cooked beluga lentils (we used Merchant Gourmet)
