Chicken, lemon & olive tagine
SERVES 4 PREP + COOK TIME/HOUR
1.6kg chicken, cut into 4 pieces
1 medium onion (150g), chopped finely
2 cloves garlic, chopped finely
1/4 teaspoon (firmly packed) saffron threads
1 teaspoon ground cumin
1 teaspoon finely grated ginger
1 teaspoon ground black pepper
1 teaspoon ground sweet paprika
1 cup (120g) pitted green Sicilian olives
1/2 cup (125ml) lemon juice, plus extra to taste
2 cups (400g) couscous
1/4 cup (60ml) extra virgin olive oil
2 cups (500ml) chicken stock
