Easy everyday COMFORT

Potato top sausage bake

PREP & COOK TIME

1 HOUR 30 MINUTES

SERVES 4-6

1 tbsp olive oil

500g beef sausages

2 onions, sliced

2 garlic cloves, crushed

1 tbsp brown sugar

2 tbsp balsamic vinegar

2 tbsp butter

2 tbsp plain flour

1 tbsp dried mixed herbs

1 beef stock cube

1 cup boiling water

Salt and freshly ground black pepper, to season

CHEESY POTATO TOP

2 medium potatoes, thinly sliced

1 cup grated cheese

Chopped fresh Italian parsley, to serve

Preheat oven to 220°C/ 200°C fan.

Add 1 teaspoon of the oil to a medium cast-iron dish over medium heat. Add sausages and brown on all sides. Remove from dish and set aside.

Reduce heat to low and add the remaining oil, onions and garlic. Gently sauté for a few minutes until soft.

Add sugar and vinegar, then cook, stirring, for another minute. Add butter and once it has melted, sprinkle over flour and mixed herbs, mixing to combine.

Dissolve stock cube in boiling water. Pour into the dish and deglaze the pan. Simmer for 1 minute.

Chop cooked sausages and add to the dish, mixing everything together. Season with salt and pepper, then remove from heat.

To make cheesy potato top, arrange half of the potato slices on top of the sausage mixture. Sprinkle over half of the grated cheese. Repeat layers with the remaining potato slices and cheese.

Cover dish with a lid or tinfoil and bake for 40 minutes.

Remove lid or tinfoil and cook for a further 20 minutes or until the cheese is golden and potatoes are cooked. Scatter with parsley and serve immediately.
