Gluten-free deep dish apple pie
PREP + COOK TIME 1 HOUR 55 MINUTES (+ REFRIGERATION & COOLING) SERVES 8
1½ cups (180g) almond meal 1 cup (180g) rice flour ¾ cup (110g) arrowroot flour 2 tablespoons caster sugar 3 teaspoons xanthan gum ¼ teaspoon fine sea salt 200g cold butter, chopped ¼ cup (60ml) chilled water 1 egg, beaten lightly 2 tablespoons demerara or caster sugar, for sprinkling Gluten-free vanilla ice cream or cream, for serving
