4 ways with FROZEN SPINACH

Spinach fried rice with egg

PREP & COOK TIME 30 MINUTES SERVES 4

Heat 2 tablespoons olive oil in a large frying pan over medium heat. Add 1 finely diced medium onion, 2 finely chopped garlic cloves and 2 finely sliced rindless bacon rashers. Cook, stirring, for 8-10 minutes or until onion is translucent. Add 2 tablespoons hoisin sauce, 250g frozen spinach that has been thawed, and 3 cups (450g) cooked rice. Cook for 5 minutes or until all the ingredients are well combined, then reduce heat to low. Make 4 wells in the rice with the back of a large spoon and break an egg into each. Season with sea salt and freshly ground black pepper. Cover pan and cook for 7-10 minutes or until eggs are cooked to your liking. Serve with sliced chilli and coriander sprigs.
