Sarson ka Saag is made primarily from mustard greens, which are rich in iron, calcium, and vitamins A, C, and K. Often blended with spinach, bathua, or other leafy greens, the saag delivers a slightly bitter yet deeply earthy flavor. Preparing it begins with washing and boiling the greens until soft, then mashing them to a smooth consistency. Traditional recipes call for tempering with ghee, garlic, ginger, and green chilies, which enhances the flavor while keeping the dish hearty. A dollop of fresh butter on top just before serving elevates the dish to indulgent perfection.
