In recent years, resistant starch (RS) has emerged as a powerful dietary component with profound effects on gut health.
Unlike regular starch, which is broken down and absorbed in the small intestine, resistant starch resists digestion and reaches the colon intact. Here, it acts as a substrate for fermentation by the gut microbiota, producing short-chain fatty acids (SCFAs) such as butyrate, acetate, and propionate, key metabolites with multiple health benefits.
