In a country where food is revered yet millions go hungry, it feels almost criminal that so much ends up in the bin.
Many Indian households prepare generous meals only to find stacks of leftovers languishing in the fridge. With a few clever habits, those leftovers can become tomorrow's lunch instead of tomorrow's landfill.
One of the simplest tricks is to organise your fridge like a kirana store. Place older vegetables, cooked sabzi and half used packs of paneer or curd at eye level so you remember to use them first. Reserve the chillier shelves for perishables like dairy and meat; the fridge door, which warms up every time you open it, is better for chutneys and sauces. Resist the temptation to stash milk there ~ it spoils faster when jostled by frequent temperature changes.
