The moment I stepped onto Bedzzz Xclusiv, leaving the Morjim sand at the door, I knew this wasn>t just a comforting holiday but a loaded bag of gastronomy and delicacy. My life, like many, is measured in meals, and I was about to embark on a delicious, highly personal odyssey that started right in the hotel's kitchen, especially at the Himmaleh Bar and the Travel Diaries Cafe.

I'm a creature of routine, and my first instinct, naturally, was to look for something I knew. Yet, a trip to Goa demands a foray into its unique flavors. My first big risk paid off: the Xacuti. It arrived, a deep, mahogany-colored curry, heady with star anise, poppy seeds, and chili. It was complex-a slow-burning warmth that settled deep in my chest. Each piece of chicken was tender, saturated in the potent spice blend. It wasn't just a dish; it was the essence of Goa served on a plate.
