Cloud kitchens outpacing traditional chains with focus on user preferences

CLOUD KITCHENS ARE emerging as a more agile and scalable model versus traditional dining chains because of their ability to quickly adapt to changing consumer preferences and leverage shared resources, according to a new study.

The report by Redseer shows that cloud kitchens have been achieving ₹100-crore revenue in 2-3 years compared to 5-6 years for traditional dine-in chains. Further, cloud kitchens are generating 25% higher daily revenue per asset—₹70,000-₹80,000 per kitchen—versus ₹50,000-₹70,000 per store for traditional establishments.
