FOLKESTONE has gained a reputation as a “younger and cheaper” version of its Sussex neighbour Brighton, and with its indie shops, quirky boutiques, galleries and cosy coffee shops, it’s easy to see why the town draws visitors from all over the country.

Sushi so simple and stunning I had to come back for more

The town offers a diverse range of restaurants including seaside food, Mediterranean cuisine, fine dining, and Asian food. I went for the latter after walking past JB Sushi Bar.

I had not looked at any reviews beforehand, so I went in with no expectations about the quality of the food - but when I later found out that the restaurant has a 4.8-star rating on Google, it did not surprise me.

One online reviewer said they felt “really good” right from the doorstep, adding: “I recommend this place with all my heart. We will definitely go back there again.”

On my first visit I was greeted by a waiter, who seated me near the door. Although the restaurant was fairly empty it still retained its charm.

The menu offered a wide variety of dishes, making it difficult for me to choose just one - so I ended up picking two.

I first ordered the Folkestone Poke (£9.85), which consisted of rice topped with salmon and tuna, avocado, cucumber, mango, edamame peas, and tempura flakes, with sweet poke sauce.
