• 1 vanilla bean (see Tip)

• 300ml tub thickened cream

• 1/3 cup caster sugar

• 4 gelatine leaves (platinum strength)

• 1 cup Greek-style yoghurt

HONEY NECTARINES

• 4 small yellow nectarines, cut into wedges

• 2 tbsp honey
