Burrata Toast with Scallion-Herb Sauce

8 oz. focaccia bread, halved horizontally

½ cup extra-virgin olive oil, plus more for drizzling

½ cup thinly sliced scallions

½ cup finely chopped fresh cilantro

¼ cup finely chopped fresh mint

¼ cup fresh Ruby Red grapefruit juice (from 1 large grapefruit)

1 tsp. finely chopped garlic

¼ tsp. crushed red pepper
