Chill out with these light and refreshing treats, all less than 70 cals

Turn your favourite cocktail into a refreshing sweet treat.
SERVES 8PREP 25 MINS, PLUS FREEZING
COOK 5 MINS
* 100g caster sugar
* 5-6 limes
* 50g mint (leaves and stalks)
* 3tbsp white or light rum, plus extra for serving
* 1 medium egg white, lightly beaten
1 Put the sugar with 600ml water into a saucepan. Heat to dissolve the sugar then bring to the boil. Add the zest from 2 of the limes and the mint, setting aside 5 leaves. Remove from the heat. Cover and leave to stand for 10 mins then uncover. Pour into a bowl and leave to cool at room temperature.
2 Strain into a container, pressing the mint to extract all the flavour. Discard the mint, then stir in juice from all the limes and rum. Finely chop the 5 mint leaves and stir in.
