Egg, leek and tomato hash
A great source of vitamin D, eggs work with calcium to strengthen teeth and promote healthy bones.
SERVES 4 PREP 5 MINS COOK 10 MINS
60g bread
5 medium free-range eggs
1tsp mixed dried herbs
2tbsp olive oil
2 leeks, sliced
75g frozen peas
50g frozen sweetcorn
100g cherry tomatoes, halved if large
75g mature English Cheddar, grated
1 Toast the bread until golden on both sides. Allow to cool slightly, then break or slice into 2cm pieces. Meanwhile, beat the eggs with the herbs, and season.
2 Heat the oil in a frying pan, then add the leeks and fry over a medium heat for 4 mins untill soft. Stir in the frozen vegetables and tomatoes, then continue to fry, stirring occasionally until any liquid has gone. 3 Stir in the toasted bread and half the cheese until evenly mixed. Pour in the eggs and cook over a medium heat, stirring occasionally until the eggs have almost set.
