Chef Luke and his wife, Sarah, once owned a successful food truck in their native Malta, but the long hours and demanding lifestyle took its toll.

'It was very stressful,' recalls Luke. "We worked 18 to 20 hours, every day, and after two years I'd had enough.' 'We were financially secure but slaves to our work, adds Sarah.
