No looking back at old icons

Can I customise the apps bundled in macOS Tahoe by giving them back their old icons?

While it's straightforward to paste A a replacement icon into an ordinary app's Get Info dialog, we can't see a way to do that with apps that are part of macOS, and are listed in /System/Applications.
