Savour the celebration with these seafood bites

Salmon stars with dill cream MAKES 12 STARS

INGREDIENTS

6 slices of dark rye bread

Thinly sliced smoked salmon

FOR THE DILL CREAM

100ml sour cream

1 tsp Dijon mustard

½ a garlic clove, crushed

A handful of dill, freshly chopped (save a few sprigs to garnish)

Zest of ½ a lemon

Juice of ½ a lemon

METHOD

Start with the dill cream, add all the ingredients to a bowl and mix until fully combined. Set aside.

Lightly toast the bread, then let it cool to room temperature.

Top with the dill cream and then the salmon slices.

Use a star-shaped cutter to cut each slice into as many stars as possible.

Garnish with a sprig of dill and serve with lemon wedges.
