BROCCOLI-CHEDDAR SOUP

Serves 6

4 tbsp. unsalted butter

1 white onion, diced

2 celery stalks, diced

1 tsp. salt

2 garlic cloves, minced

2 tsp. ground mustard

½ tsp. pepper

1/4 tsp. cayenne pepper

1/4 cup flour

4 cups vegetable broth

1 lb. broccoli florets, chopped (about 4 cups)

2 carrots, peeled and cut into matchsticks

8 oz. sharp Cheddar cheese, shredded

4 oz. medium Cheddar cheese, shredded
