What Are Fermented Foods?
Fermentation is a natural process in which microorganisms like bacteria, yeast, or moulds break down food sugars into acids or alcahol. This process enhances the food’s shelf life, alters its flavour, and can even make certain nutrients more bioavailable. Popular examples of fermented foods in Indian cuisine include yoghurt, curd, raita, idli, dosa, dhokla, pickles (especially mango and lime), and kanji. Internationally, foods like kimchi, miso, and kombucha (a fermented tea) are also rich in live bacteria, or probiotics, which play a crucial role in maintaining gut health.
