In an exclusive interaction, Chef Adwait Anantwar, Chef Partner at the popular restaurant INJA by Atelier House Hospitality, discusses how he brings uniqueness and creativity to his culinary creations.

Generally, when we ask a chef why they chose to enter the food business or what inspired them to become a chef, the typical answer is a love for food and spending time cooking alongside their mother or grandmother. However, for Chef Adwait Anantwar — who rose to fame with Mohalla Restaurant in Dubai and is now making waves with his creativity at INJA, the Indo-Japanese restaurant that replaced Indian Accent at The Manor, New Friends Colony in Delhi — it was always about the energy, the process of creating something unique, and an escape from studies. Here are excerpts from the interview:
INJA is a very different as compared to others in the same space. What was the idea behind curating a fusion concept restaurant?
The whole idea was to be different and incomparable. Honestly, I hate being compared to others, as it happened a lot while I was growing up, and I’m sure many people from my generation can relate. So, the drive to stand out and be unique was the initial thought behind creating a new concept, which ultimately led me to create INJA.
