The dish is inspired by the festive streets of Italy, Germany, and Austria, where pork takes centre stage during the winter. Cooked to perfection over 24 hours, it pairs tender pork with a sweet and spicy apple purée, salsa macha, and crunchy pork floss.
Dos, the new restaurant in town, offers an interesting take on global street food from French, Mediterranean and Eastern European cuisine, among others. Backed by Lite Bite Foods, the F&B retail company, this is the second offering by Chefs Jatin Mallick and Julia Carmen Desa, who co-founded the popular restaurant Tres.
