It’s been a life goal to visit Iran, and recently I was lucky enough to join a women’s-only New Zealand Travel & Tour group. Persian cuisine is famous for being some of the most delicious in the world and I was not disappointed. This is a country that takes carbs very seriously, so what’s not to love?

1 Rice as an art form

Fluffy and golden, Polo Ba Tahdig – which translates to ‘bottom of the pot’ – is a many-step process that is the prized dish on any Persian table. The result is something akin to magic: A pile of rice that is light and fluffy on the bottom, then a greasy, crunchy, and crispy heaven on the top. It’s a cooking act of patience – you have to leave the rice to absorb the butter and oil down the bottom, and sometimes bread or potatoes is added early on in the process for extra crunch and flavour.
