CHOCOLATE AND MARMALADE CELEBRATION CAKE

serves about 20

250 gm unsalted butter, chopped

200 gm dark chocolate, chopped

1 tbsp instant coffee granules 375 ml hot water

460 gm caster sugar 185 gm self-raising flour

75 gm plain flour 30 gm unsweetened Dutch cocoa powder

2 eggs

2 tsp vanilla extract

YOU WILL ALSO NEED

200 gm orange marmalade, plus candied orange peel or peel from the marmalade

FOR THE BUTTERCREAM ICING

250 gm unsalted butter, at room temperature, chopped

400 gm icing sugar

60 gm unsweetened Dutch cocoa powder

2 tsp vanilla extract

80 ml milk

½ tsp salt

1 To make one cake, preheat the oven to 150°C/Gas 2. Grease and line the base and sides of a 24 cm spring form cake tin. It is a very liquid batter, so if your tin leaks secure a piece of foil around the outside of the base and side. Melt the butter in a pan over a medium heat and add the chocolate, stirring to melt. Add the coffee, water and sugar, stirring until you have a smooth mixture.
