I’ve Been Lucky enough to have worked all over the world but my favourite [job] by far was right here at home, at Richard Branson’s private game reserve at Sabi Sands in the Kruger Park. The guests always wanted to try foods that they had never tried before, which is how we came up with this dish. It’s recognisable in that it’s a breakfast stack, but totally different in terms of flavour.

We twisted eggs Benedict and made it using typically South African ingredients, as well as traditional English muffins. Adding chakalaka brings a new, exciting element to this breakfast recipe, and adds beautiful colours.
