Back to foraging for food and this time it’s not a caveman necessity
You might think going out to look for food and gather it from the farms and wild lands may sound primitive, but it is a hot trend, especially in the nordic countries. Sweden, with its environment forward sensibilities, has been at the forefront of this phenomenon.
“There are a few very basic thumb rules when it comes to foraging,” says Lena Engelmark Embertsen who runs the Hogtorp gard farm in Sweden and is one of that nation’s most prominent forager. “The most important being only forage for produce that you know for certain is safe. Foraging is not the time to take risks and poisoning oneself or others.” So, for mushrooms, her number one rule is simple: if the top and the underside are of the same colour, leave it as it is. Only, if say the fungus has a brown top and a white underside, should it be foraged and consumed.
