Caitlin, who looks after The Botanist Gin, Bruichladdich Whisky and Mount Gay Rum, and travels to promote the brand, spoke to The Man on all things botanical and how gin and wine have the same nuances.

What is the forager experience?

We encourage clients and bartenders to go out and forage to make gin and tonics, and cocktails. An expert can tell the flavour profiles of the herbs, mushrooms, pines, barks and seaweed.

And then you experiment with the finds?

I experiment and create cocktails in my own kitchen. Gin is now big on a global scale. Spain was the epicentre and then it spread quickly through Europe. It is very smooth when you drink it neat. There are many different styles of gin as they are with wine. It depends on who is making it, and in what part of the world.
