Trisha's so-easy Easter feast

Brown Sugar Honey Glazed Ham

No one will guess Trisha's ham comes together with 3 ingredients

1 (9-10) lb. bone-in smoked ham

1 1/4 cups packed light brown sugar

1/2 cup clover honey

● Adjust oven racks to accommodate large covered roasting pan. Fit pan with shallow rack. Heat oven to 350°F.

● Unwrap ham and rinse in cold water; place on rack in roasting pan. Cover pan with lid and bake for half of estimated cooking time (Total cooking time is 20 min. per lb.), about 1 hr., 40 min. Halfway through cooking time, add sugar and honey to small pot; over medium heat, cook, stirring, until smooth and sugar is dissolved. Pour mixture over ham and continue baking ham, basting occasionally with drippings in roaster, about 1 hr., 40 min.

● Check for doneness at end of estimated cook time by inserting meat thermometer at meaty point (not into fat or touching bone). It should register 160°F. Allow ham to rest for 15 min.

Servings: 12. Active time: 20 min. Total time: 3 hrs., 55 min.

Loaded with fresh spring herbs

● In food processor, pulse 2 (15.5 oz.) cans butter beans (rinsed, drained), 1 clove garlic, zest and juice of 1 lemon, and 3 Tbs. extra-virgin olive oil until smooth, 1 min. With motor running, drizzle in 1/4 cup water until desired texture. Add 1/4 cup each basil, dill and parsley, 1 Tbs. tarragon wine vinegar, 1/2 tsp. kosher salt and 1/4 tsp. black pepper. Process until combined. Transfer to serving bowl. Drizzle with 1 Tbs. olive oil. Serve with crudités.

Servings: 6-8. Active time: 20 min. Total time: 20 min.
