An easy-prep apple syrup is the secret to these light-as-air treats that simply melt in your mouth
Apple Cider Donuts
2½ cups refrigerated apple cider
3½ cups all-purpose flour
1¾ cups sugar
2 tsp. baking powder
1¼ tsp. cinnamon
¼ tsp. salt
4 Tbs. butter, melted
1 egg
Oil, for frying
• In pot, bring cider to boil over medium-high heat; reduce heat to medium. Cook until cider is reduced by half (1¼ cups), about 15 min. Transfer to bowl; chill until cool, about 1 hr.
• In large bowl, stir flour, ¾ cup sugar, baking powder, 1 tsp. cinnamon and salt. In separate bowl whisk together cider, butter and egg; stir into flour mixture. Knead until dough forms. Transfer dough to lightly floured surface. Roll out to ½" thick. Using 2½" and 1" round cutters, cut out donuts and centers, reshaping scraps as needed.
• In heavy-bottomed pot, heat 2" oil over medium heat until shimmering or until deep-frying thermometer inserted into oil registers 350°F. In batches, fry donuts, flipping once, until cooked through, 1–2 min. per side. Drain on paper towels. Mix remaining cinnamon and sugar in medium bowl. Toss warm donuts in cinnamon-sugar mixture until coated. Transfer to rack; cool.
