Turkey Lettuce Cups

Grated ginger root adds zing to ground turkey simmered in convenient bottled barbecue sauce—for a heartier meal, serve with our optional cilantro rice

1 Tbs. olive oil

1 lb. ground turkey

1 Tbs. grated peeled fresh ginger

1 clove garlic, minced

1/2 cup barbecue sauce

8 leaves Bibb lettuce

2 scallions, sliced

1 red jalapeño chili, sliced

Cilantro rice (optional)

• In 12" nonstick skillet, heat oil over medium-high heat. Add turkey, ginger and garlic; cook, stirring occasionally, until turkey is no longer pink, 7–8 min.

• Stir in barbecue sauce and 1/4 cup water; reduce heat to medium-low. Cook, stirring, until flavors blend, 5 min. Fill lettuce with turkey mixture. Top with scallions and jalapeño slices. If desired, serve with rice.

Easy variation: Serve with Cilantro Rice. In pot, mix 2 cups water, 1 cup dry rice, 1 Tbs. chopped cilantro and 1 clove garlic (chopped). Bring to a boil; cover. Reduce heat to low. Cook 20 min.
