Crispy Chicken Parm 'n' Zoodles

If you can't find store-bought zucchini noodles, Lisa says you can make your own using a julienne peeler

12 oz. spiralized zucchini (1½ medium)

1¼ tsp. garlic powder

1¼ tsp. onion powder

2 (5 oz.) raw boneless skinless chicken breast cutlets

¼ tsp. Italian seasoning

¼ tsp. salt

2 Tbs. panko breadcrumbs

2 tsp. grated Parmesan cheese

1 cup marinara (70 calories or less)

¼ cup shredded part-skim mozzarella

• Heat oven to 400°F. Spray baking sheet with nonstick spray. Place zucchini noodles on baking sheet, and season with 1 tsp. garlic powder and 1 tsp. onion powder. Top with chicken.

• Season chicken with Italian seasoning, salt, remaining ¼ tsp. garlic powder and remaining ¼ tsp. onion powder.

• Spray chicken with nonstick spray. Top with breadcrumbs and Parmesan. Bake until chicken is cooked through and zucchini has softened, about 25 min.

• Top chicken and zucchini with marinara sauce. Top chicken with mozzarella. Bake until cheese has melted, 3-5 min.

Servings: 2. Active time: 15 min.
