VANILLA BEAN PANNA COTTA WITH TOFFEE PEACHES
SERVES 8 PREP 15 MINS + 6 HOURS OR OVERNIGHT CHILLING + 10 MINS COOLING COOK 15 MINS

1 Put eight 1-cup-capacity glasses on an oven tray lined with a damp tea towel.

2 Put cream, milk, sugar, cinnamon stick and vanilla in a medium saucepan over medium heat. Stir until sugar dissolves and mixture is simmering. Do not boil.

3 Put gelatine and water in a small heat-proof bowl and set aside for 5 minutes. Microwave on High for 20 seconds or until gelatine has dissolved.

4 Remove cream mixture from heat and discard cinnamon stick. Stir gelatine mixture into cream mixture until well combined. Transfer to a jug. Pour into prepared glasses. Refrigerate for 6 hours or overnight until set.
