BEST BURGERS EVER AND EVER AMEN

MAKES 6 BURGERS PREP 20 MINS COOK 8-10 MINS

• 900g beef mince (I always get coarsely minced chuck steak from the butcher - it's worth it)

• ground white pepper

• 12 slices burger cheese

• 6 good-quality brioche or burger buns, halved

TO SERVE

• ketchup

• mustard (the yellow bottle)

• bowl of pickles

• bowl of diced white onion

• lettuce leaves

• sliced tomato

1 Place beef mince in a bowl, season with salt and white pepper and mix. Shape meat into 6 x 150g patties. Flatten slightly.

2 Preheat a barbecue plate to very hot. Put patties on hot plate and cook for 3-4 mins before flipping. Place a slice of cheese on top of cooked side. When cheese is melted - about 3-4 mins more - the burger is done!

3 Meanwhile, put halved buns face down in a slightly hot frying pan with a lid. You just want to lightly heat them. When they look good, throw in a couple tsp of water and put the lid on. This steams the buns! You're so clever!

4 Take buns and put them on plates with remaining slice of cheese on one half. Place hot burger patty on top of this piece of cheese.
