BAKED BEANS

Transform these magic beans into delicious dinners

BACON, EGG & BEANS JACKET POTATOES

SERVES 4 PREP 10 MINS COOK 1 HOUR 15 MINS

• 4 x 200g potatoes

• 220g can baked beans in tomato sauce, warmed

• 1 cup grated tasty cheese

• 1 tsp oil

• 2 rindless bacon rashers, chopped

• 1 small red onion, chopped

• 2 eggs, lightly whisked

• chilli sauce, roughly chopped fresh parsley, to serve

1 Line oven tray with baking paper.

2 Scrub potatoes. Prick all over with fork. Place directly on oven shelf. Cook in a 180°C preheated oven for 1¼ hours until potatoes are cooked through and skin is crisp. Cool slightly.

3 Cut potatoes in half lengthways and place on tray. Scoop out a little flesh. Spoon in some beans, then cheese.

4 Cook in same oven for 4-5 mins until cheese is golden and bubbling.

5 In a large frying pan, heat oil on high. Saute bacon and onion 2-3 mins until onion is softened and bacon browns. Add eggs. Cook, stirring occasionally, 2-3 mins until lightly scrambled.
