Lemon and amaretto mousse We’ve swapped cream for yogurt in this zingy no-bake treat.

SERVES 4 PREP 15 MINS, PLUS CHILLING COOK 15 MINS

image1 In a glass bowl set over a pan of barely simmering water, add the lemon zest and juice, 100g of the sugar and all of the spread. Stir until melted.

2 Over the heat, add the beaten eggs and whisk continuously for 7-8 mins until thickened. (It should coat the back of a spoon.) Sieve the curd into a clean bowl and chill until needed. This will make 260g of lemon curd.
