For many, congee is the ultimate comfort food and makes for a delicious breakfast on a chilly winter morning. The rice is cooked in such a way that results in a silky, smooth and luxurious texture. It's also easy to make ahead and reheat before serving with a little extra stock or water. This version is made with chicken stock and flavoured with ginger, garlic, chilli, and shiitake mushrooms, but you can add any ingredients you have on hand.
