Due to its wide accessibility, sustainability, inexpensive, nutritious nature, accountability, and oxygen resistance, wheat gluten is increasingly being utilised in food packaging. It is used as a food-grade coating on perishable goods like cheese and strawberries to extend their shelf lives. A strong oxygen barrier is thought to be one that demonstrates notable barrier to the interaction between lipids, oxygen, and carbon dioxide. Even though they offer advantages, coatings composed of wheat gluten have poor mechanical durability since the ingredient is readily soluble in liquids and produces surface cracks (Dong et al., 2022).
