THAI GREEN SALMON NOODLE BOWL

SERVES 2

440g M&S Caledonian Gold salmon fillets

• 4 tbsp green Thai curry paste

Salt and pepper ½ pack (90g) rice noodles 125g asparagus tips 100g mangetout 2 tbsp light olive oil 1 tin (400ml) coconut milk 1 tsp caster sugar 1 tbsp fish sauce 1 lime, juiced 1 lime, cut into wedges, to serve 1 red chilli, deseeded and finely sliced, to serve

1. Cut each piece of salmon into 3 equal pieces and place in a bowl with 1 tbsp of the curry paste. Season and mix well, then marinade for 15 minutes.
