Bigger Bustler worth the wait

IT’S taken over two years, but Bustler Market's new food hall has opened its doors with mouth-watering flavours from across the globe.

The new venue at Sneinton Market - directly opposite the unit housing the bar that opened in October 2022 - brings the total number of seats to more than 500.

The hall, which years ago sold wholesale fruit and vegetables, has been transformed with four kitchens and seating for just over 100, from cosy sofas and armchairs to tables for two.

Olivia Pritchard, Bustler Market’s managing director, said: “It's taken two-and-a-half years so it’s been a long time in the making. We are a really small independent business. We don’t have any backing or funding. It’s a large space and to do the first side took us a lot more money than we thought, so it’s just taken that little bit longer to recoup the funds and start doing the work here. We wanted to make sure we were doing it properly. We wanted to put everything into it. That's why it’s taken a little bit longer than we were hoping but I think it was worth the wait.”

The new hall has permanent kitchens, which are now home to Argentinian barbecue Banquet 1415, Big Mouth Gyoza and Dirty Chicken. The fourth was set to have an ever-changing vendor but Olivia said: “We've actually pivoted slightly from the rotating kitchen because we've found Little Big Sicily who do arancini and deep-fried lasagne and we've offered them a longer position here for six months. They were just too good that I didn’t want to swap them out with shorter rotating ones.”
