From their medicinal origins to their central role in modern mixology, bitters tell a story of ingenuity, evolution, and enduring appeal.
A Medicinal Beginning
The history of bitters can be traced back to ancient civilizations, where herbal tonics and infusions were created for medicinal purposes. In Egypt, Rome, and China, practitioners steeped roots, bark, herbs, and spices in alcohol to extract their healing properties. These concoctions were believed to aid digestion, cure ailments, and promote overall well-being.
The evolution of bitters as we know them began in the 18th century, when apothecaries in Europe and America developed concentrated herbal mixtures to treat a range of issues, from indigestion to seasickness. Angostura bitters, one of the most famous brands, was first formulated in the early 19th century by Dr. Johann Gottlieb Benjamin Siegert in Venezuela. Originally intended as a medicinal tonic for soldiers, it quickly gained popularity for its unique flavor and versatility.
