What better way to start the day than with eggs for breakfast? Chris Baber proves that eggs don't need to be boring
In the last part of our series of recipes with renowned chef Chris Baber and premium cookware brand HexClad, we take a look at how to cook with the humble egg - and discover new ways to spice up this fridge staple. “There's so much hype on social media at the moment about how good eggs are for you,” says Chris. “There are so many ways you can cook eggs; they can be used for breakfast, lunch or dinner. They are packed full of protein, healthy fats, vitamins and minerals. It’s an ‘egg-cellent’ value proposition that lends itself to so many different dishes. Here’s a few of my favourite options (top tip: use a HexClad frying pan to make the perfect egg).”
Chorizo shakshuka
This is one of my all-time favourite egg recipes. It’s good for any time of day. It’s all made in one pot - so nice and easy on the washing up! The combination of the spicy chorizo and tomato sauce is a winner, while you can dip a slice of sour dough bread into the runny yolk. It's also a good way of using up any soft herbs in the fridge.
INGREDIENTS
Serves 2
- 75g chorizo, diced
- 1 red onion, finely diced
- 1 red pepper, finely diced
- 1 tsp sweet smoked paprika
- 1 can chopped tomatoes
- 3-4 eggs
- 30g feta cheese
- Handful coriander
METHOD:
1. Heat 1 tbsp olive oil over a medium heat in a large frying pan
2. Add the chorizo, fry for 2 minutes until the oil are released
3. Add the peppers and onions, season with salt. Cook for 3 minutes until softened
4. Add the paprika. Stir, cook for 30 seconds
5. Add the chopped tomatoes with a splash of water too rinse out the tin.
